Recipe: Raspberry Valentine Cookies
We love to make these for Valentine's day every year!
Depending on the size of your cookies, this recipe makes about 1 1/2 dozen.
1 cup butter, softened
2/3 cup sugar
2 egg yolks
2 1/2 cups flour
raspberry jam (seedless, otherwise must be strained)
powdered sugar
Cream butter and sugar together.
Add egg yolks, mix well.
Add flour and salt, beating well.
Form into a ball, and chill (I've skipped the chill part before and not had bad results. I think it just makes the cookies flaky).
Roll dough out to 1/8-1/4 inch thickness.
Use a doughnut cutter or two cookie cutters, one large and one small to cut shapes.
You'll need the same amount of solid shapes (bottoms) as shapes with the centers missing (tops).
These cookies tend to stick so it's good to bake on parchment paper if you have it, otherwise lightly grease your cookie sheet.
Bake in a 375 degree oven for 8-10 mins.
Move the cookies to a wire rack to cool.
Once cooled, sprinkle the tops (pieces with missing centers) with powdered sugar (I use a wire mesh strainer).
Spread the bottoms (solid cookies) with a thin layer of raspberry jam (sometimes we use chocolate pread instead!).
Place the tops sugar side up on top of the raspberry filling. Yum!
